White Chocolate Pomegranate Blondies

Serves: 12 blondies
Ingredients
1/2 cup Bloom Fresh pomegranate arils, patted dry
1/2 cup (1 stick) unsalted butter, melted and cooled
1 cup sugar
1 large egg
1 teaspoon vanilla extract
1 cup all-purpose flour
1/2 teaspoon salt
1/2 cup white chocolate chips
Instructions
- Preheat oven to 350 degrees
- Spray an 8×8 baking dish with cooking spray then line parchemnt paper and set aside
- Whisk butter and sugar until creamy
- Add in egg and vanilla until blended
- Gradually stir in flour and salt until combined
- Fold in pomegranate arils and white chocolate chips
- Spread batter evenly in prepared baking dish
- Bake for 35-40 minutes until toothpick inserted into the center comes out clean
- Cool completely in baking dish
- Carefully remove from parchment paper and cut into squares
- Store in an airtight container until ready to serve
